Triple Chocolate Chunk Cookies

September 11, 2011

Sometimes a chocolate cookie will suffice.

Other times, only a triple-chocolate cookie will do.

This weekend was a triple-chocolate cookie weekend.

No, nothing bad happened.

In fact, a lot of good happened (Nick was in town, I bought a new car and, in turn, officially consider myself another step towards becoming a “real adult,” the torrential rain of the last week let up for more than twelve hours, etc.).

And really, who needs an excuse to add MORE chocolate to their cookies? Not this guy, that’s for sure.

Triple Chocolate Chunk Cookies

  • 6 tbsp butter, at room temperature
  • about 1/4 C nonfat plain Greek yogurt
  • 1/2 C sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1 C flour
  • 1/4 C cocoa
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 C dark chocolate chips
  • 1/4 C white chocolate chips

  • Cream butter, yogurt, and sugar until fluffy.
  • Add in egg and vanilla and beat until incorporated.
  • In a medium bowl, combine flour, cocoa, baking soda, and salt and mix well.
  • Slowly add flour mixture to wet ingredients.
  • Fold in chocolate chips.
  • Bake at 350* for 10 minutes.

Not too sweet, a little cakey, and just chocolatey enough.

This was a triple chocolate weekend, and I’m counting that as a win.

What kind of weekend did you have?
